The link provided is not working for me but I believe I am using I am using HiveManager Classic 8.1r2

Thank you for letting me know. You should be able to set up syslog reporting by going to Configuration>Select the network policy> Edit Additional Settings> Management server settings>Syslog Server.

Just as a follow up, once I make the change, will I have to update the APs or will the change be dynamic?

Since we're a controllerless environment, all changes have to be pushed out to the devices before they are live, so your APs will need an update.
