SU-MIMO (Single User-MIMO) uses multi-transmitter/receiver technology and allocates the full AP bandwidth to one high-speed device during the allotted time. MU-MIMO uses the multi-transmitter/receiver technology to send multiple device signals at once. So it really comes down to, do you want very powerful connections for a single or a few clients, or do you want many signals going at once for a faster speed network wide.

So basically SU-MIMO gives full bandwidth and MU-MIMO shared the bandwidth at a given time
