Can I change the language at the Guest Admin page (the page where we can create the guest tickets)? Or customize this page?

Sorry I think I misunderstood, you want to Customize the Admin login where the Admins create Guest Portal Accounts, if so that is not something that can be changed.

You can also save off the Default Template, make changes, then upload it.
