while the AP goes "off" on its own so re-creating the issue is like waiting for paint to dry, and when it does its too late.

 

can we not get old logs some how?

What does client monitor reveal? I would recommend selecting a particular client that you can recreate the problem and monitor the connection attempts. Feel free to post your findings for further assistance.
