Is there a Matrix with compatibility info which Hive OS version works with different HiveManager versions?
This would be very helpful when migrating from Classic to NG on Premise installations.

When migrating from Classic to NG the HiveOS version has to be supported from the NG deployment. I wasn't able to find any information on which Hive OS versions are supported in different HiveManager on Premise Releases.
The supported HiveManager Cloud versions are stated in the Hive OS release notes.

HiveManager Classic 8.2 can support the 8.2 HiveOS line. You can always check which HiveOS is compatible with which HiveManager on this page: https://docs.aerohive.com/330000/docs/help/english/ng/Content/reference/docs/release-notes.htm?Highlight=release%20notes
For 8.2r4/5 specifically:

So, since Hivemanger Classic is currently up to 8.r2c we should not be using HiveOS 8.2r4 or 8.2r5?

HiveManager Classic can work with any HiveOS equal to or lower than the HiveManager version, but HiveManager (formerly NG) needs HiveOS 6.5r3 or higher to manage the device.
