So we noticed a pretty hefty spike in network traffic today originating from one of our APs. Is there a way to find out what clients were connected to that AP and how much bandwidth they used for a specific time period? Hivemanager Online (or Classic)

For this I am using syslog, sflow and firewall logs. HiveManager Classic does not offer much when it comes to historical reporting.

You could try to see this data in the dashboard widgets, but HiveManager Classic doesn't store data for very long, and the APs store data for even less, just to prevent their memory from filling up. If you set up reports ahead of time, you would be able to see unique clients and their usage, but that isn't something we can capture retroactively. Your best bet for this kind of issue is a packet capture run while the spike is happening.
