No. You can only have one DHCP server on a network even if you do have VLANS. What I could recommend though is every so often doing a backup of DHCP data. Open DHCP and then File >> Save/Backup. Note where it saves it, and then copy that folder with data from the DHCP server to some place safe.
IMPORTANT: If you DHCP server dies, and you then have to add the DHCP role to another server, you MUST place the saved data in the same file structure. So after adding the DHCP server role to the new server, your C drive of the DHCP server it might look like this: Windows\System32\dhcp\backup. On the new server you have to make sure the same folders are there (create if you dont have the folder say Backup), copy your saved DHCP info and paste it into that folder, then open DHCP and do File Restore and pull it from that same folder you placed it in. Its a weird kind of bug, but if you dont do that you wont see any scopes or anything.
If you were to have a second DHCP server on your network it would be a complete nightmare, they are called Rogue DHCP and black hats are known to bring networks down using that physical technique if they have physical access to a site.
