So we have en entirely EOS network (S-Series router and C-series switches) and our management traffic is VLAN 252 which is routed on the S-Series. Now I'm setting up an XOS stack and I can't change the management VLAN. How can I get the XOS management traffic into the right VLAN and subnet?

As long as there is an IP interface on the VLAN in EXOS, it can be used for management purposes. The Mgmt vlan refers to the separate management port.
