How do you create a new SSID and associate the network profile and assign it with a DHCP server?

In general you would want to create an SSID by going to Configure> Network Policy> Create a new one by clicking on "Add network policy" or open an existing one> Go to the Wireless networks tab> Click "Add", then chose an SSID set up method and create the SSID from there. If you can tell me what kind of SSID you are looking for (PSK, PPSK, Radius, Open, Self registration, Guest internet access only, MAC auth, etc), I can point you to a guide that will walk you through how to build this step by step.

If you are hosting the DHCP server somewhere other than on an AP, you would just need to assign the VLAN that DHCP server is serving in the user profile within the SSID. The traffic will be put on that VLAN and will reach your DHCP server so long as the switches in between the AP and the DHCP server can pass traffic on that VLAN.

To associate a Network Policy with an AP, you can either assign an existing policy when on-boarding the AP, or once the AP is connected go to Monitor> Click on the Host Name of the AP> Device Configuration (left hand side menu)> Select the network policy from the drop down list under Network Details.

You'll want to push a complete configuration update out for any new SSIDs, DHCP servers, or Network Policies. This will reboot the AP, just something to be aware of.
