If an AP (ap250 or ap550) is patched with only one cable, will there be any functional difference if the Eth0 & Eth1 ports are configured for Aggregate or Redundant vs the default.

I understand I won't have any advantage, but I was curious if having the AP configured for one of these modes will cause it to act any different than in the default mode.

It would try to send data using both ports if set to aggregate mode, but since the APs rarely reach enough traffic to warrant aggregation, there wouldn't be any noticeable changes.
