Is the Extreme AP (AP305C-WR and AP 410C-1-WR) designed to spread the signal 360 degrees?

Yes, both model APs specified have internal omni-directional antennas.

The actual antenna radiation patterns/polar plots can be found in each of these AP's data sheets.
